Almond Butter Protein Bars
3/4 cup of old fashioned oats
1/4 cup cashews, raw unsalted
1/4 cup of other dried fruit (raisins,cherries, pineapple, etc.)
3 tablespoons of coconut flakes, unsweetened
1/4 almond butter, unsalted
In a food processor, first pulse oatmeal until it becomes a powder. Next add the dried fruit and cashews. Blend until coarse. Add almond butter and a couple teaspoons of water. Blend until it starts to come together. It will darken but still remain crumbly. You should be able to pinch the mixture. Now on a clean board or some wax paper, pour the mixture on top and form Into either a large rectangle to cut into bars or you can make little protein balls. I wrap my bars in parchment paper to stay fresh. If you make protein balls, be sure to store in a airtight container. These will last for a week in the refrigerator.
